Today has been a rabbit hole of word processors/digital typewriters. There honestly isn't much to say about the progression through them though, because they all suck. The best option you have is probably the old, relatively crappy Alphasmart stuff, the modern Freewrite stuff is overpriced as fuck with extremely scummy people behind it, and the upcoming BYOK I am 100% convinced is a literal scam ($200 dollars for a screen and a stand; literally just buy a stand for your phone and put it in airplane mode). The other half of BYOK is writing software that is also a scam, because it's just Scrivener ($60) + Scapple ($21) but 300 fucking dollars for literally no reason. Speaking of Scrivener, that's just how the entire saga ended because I already had a product key and who really needs a dedicated word processor. It was for Scrivener 1 but I got a Scrivener 3 key for free thanks to it. The only "complication" was having to set up wine for it, which involved installing the 32-bit version of wine for reasons I don't think I even want to know.
